Matt and I have been trying to watch our starchy carb intake, so I researched for some new recipes.
I found this delicious dish called Chicken Encilantrada. We usually have a "scale" system here at Casa Workman, and it definitely got rave reviews. It's a 10!
With only 5 ingredients, this will be on the table in no time =)
Ingredients:
2 cups-shredded cooked chicken
7oz Salsa Verde
1/2 cup Chopped Cilantro
1/4 cup chopped onion
1/2 cup chicken broth
*Optional*
Shredded Cheese
Tortillas
Sour Cream
1.) Cook Chicken and Shred.
*What I like to do is have the chicken cook in the crock pot during the day in 2 cups chicken broth and seasoned salt. That way it is ready when you get home*
2.) Add 1/4 cup vegatable oil in skillet and add onion. Saute until soft. Add Chopped Cilantro and Salsa.
Reduce heat to low and simmer 3 min.
3.) Add chicken and broth and stir until heated through.
4.) Wrap in a Whole Wheat Tortilla and top with cheese and Sour Cream.
As you can tell, Matt was ready to eat!
