Bayou Chicken Pasta (No Pic)

This is a knock off from Chili's version of their Cajun Chicken Pasta.
It is Yummy!

Ingredients:
12 oz Penne
2-3 Chicken Breast thawed
chili powder
red pepper flakes
garlic powder seasoned salt
5 tbsp butter
1 1/2 cups 1/2 1/2
2 tbsp flour
3/4 parmesan (sp?)
2 roma tomatoes



Pasta:
Cook 12 oz penne according to directions on package.



Chicken:
Cut up 2 thawed chicken breast into chunks or bite size pieces, and coat with chili powder, red pepper flakes, garlic powder and seasoned salt and don't skimp on any of these. I dont measure, but I would say about a 3/4 a tbsp each (maybe a little less on the salt).
Heat about 3 tbsp vegetable oil and 2 tbsp butter over medium high heat and cook chicken until cooked through. Cover to keep warm.

Cut up about 2 Roma tomatoes into chunks and add to chicken to get warmed through.

Sauce:
Heat 3 tbsp of butter over medium heat until melted. Add 2 tbsp of flour and stir for 1 min. Add 1 1/2 cups 1/2 1/2 and cook about 6 min until thickened. Remove from heat and add 3/4 cups parmesean cheese and salt/pepper. Cover to keep warm.

Assemble everything together and test for seasonings. I usually go back and add more of the spices.

Serve with warm french garlic bread.
