1 lb Italian Sausage (Skin Removed) Cut into Chunks
1 1/2 Bell Pepper, Cut into Strips
1/2 Sweet Vadalia Onion, Cut into Strips
Potatoes, cut into cubes ( I used abut 6 potatoes)
1 TBSP Olive Oil
S & P, Garlic Powder, and Oregano
White Rice (Optional)
1.) Preheat oven to 425
2.) In a bowl, add potatoes, bell pepper, and onion, olive oil and spices and stir to coat.
3.) Line a Baking sheet with foil and spray with nonstick cooking spray
4.) Spread veggies evenly on baking sheet
5.) Scatter italian sausage among veggies
6.) Roast in oven for about 35 min, until sausage is cooked thru. Stir occasionally.
7.) Serve over hot cooked rice
