This recipe for classic meatloaf is reinvented for nutrition and added flavor. It's REALLY good. Ask my husband, we usually have it quite often.
1/2 c. onions
2 T. fat free chicken broth
2 T. garlic, minced
1 1/2 lbs ground turkey (i get italian seasoned)
1/2 c. bread crumbs
1/2 cup + 2 T low fat, low sodium marinara sauce
2 T. fresh basil
2 T italian parsley
onion powder, seasoned salt, pepper........I added these
1.) Preheat oven to 350 degrees
2.) Saute onions in chicken broth until lightly browned
3.) Add garlic and cook 5 minutes more. Remove from heat and let cool.
4.) In mixing bowl, combine onion and garlic mixture, ground turkey, bread crumbs, 1/2 cup marinara, and herbs and spices.
5.) Place in lightly PAM coated loaf pan.
6.) Spread remaining marinara over the top of the meatlof and bake until through. 35-45 min.
7.) Let cool 20 min. before slicing.

ashlee, this sounds yummy. i'm going to the store and get the few items that i don't have and prepare this for granma. i'll let you know how it turns out. smooches, mom
